We had a party here last night for the students that went with me to NYC in May. We had a ton of food and looked at their design projects. All in all they were pretty good and we had a fantasic time in Manhattan (sorry Donna).
But when we have parties like this I like to try to make something new and use the guests as guinea pigs.
I'm a big Food Network fan (Min swears I've seen every episode of Iron Chef... Japan and America) and some of my favorite shows to watch are $40-A-Day and 30-Minute Meals. Both shows are hosted by Rachel Ray.
Anyways, a few weeks ago she did a show where she made these really great nachos and being the Tex-Mex junky I am, I had to try it.
To accomplish it I had to make a Beef and Black Bean topping, Japeleno Jack Cheese Sauce and Pico de Gallo... and I must say that it turned out pretty good.

Hey Mike, I'll give you one guess what I want you to make when you come out to Utah.
He's planning on it. He figured there would be enough people to help him eat it there!!
